Controlling pH is a challenge brought into sharp focus by climate change, which affects the profile and color of your wines. STARS® pH addresses this with a continuous solution that naturally optimizes the acidity of grape must and wine. Configured in line with your volumes (15-240 hl/h), your unit will remove, as necessary, surplus potassium (acidification) or tartaric acid (deacidification), thus restoring the product’s natural acidity. Inline operating control, based on your tasting, lets you precisely adjust your settings to achieve a just-right balance. You obtain a wine with an unimpaired organoleptic profile, protected from oxidation, fresh on the palate, and with no bitterness.
STARS® pH operates as a single unit and can easily be mobilized at any point during vinification – for example at the end of fermentation for premium wines, or during blending. We can also design a mixed STARS® unit combining stabilization (coupled with filtration, if necessary) and a pH adjustment module – an all-in-one STARS® able to work with the highest precision on wine stability, acidity, and color.
