A two-step membrane-based process…
The gentle extraction of a hydro-alcoholic permeate through selective membranes conserves wine’s noble compounds, which remain in the concentrate.
Only the permeate is treated by the membrane-based process. The extracted alcohol is collected in a valorizable hydro-alcoholic solution. The dealcoholized permeate is immediately reblended with the osmosis concentrate.
